Sodium intake

FDA guidance to food industry aims to reduce sodium consumption. American Heart Association comment: Short-term voluntary sodium reduction goals could cut sodium intake across the country. The FDA’s targets represent an important step forward, but lowering sodium intake to 3,000mg per day is not enough. Eating too much salt is making Americans sick. Even a 12% reduction can save lives. Here’s our simple recipe for making stellar pizza at home:
Mix 1 package (0.25 oz) of dry yeast into 1 cup of warm water
Let sit for 5 minutes.
Add 2.5 cups of bread flour and 1 tsp of salt. Mix.
Knead the dough for a few minutes.
Dust your hands with flour and form your pizza dough into a round ball. Transfer to a bowl.
Let the dough sit, covered, in the fridge overnight. THIS IS KEY!
Remove the dough from the fridge, let sit at room temperature for 30 minutes, then using your hands or a rolling pin spread out the dough.
Set your oven as high as it can go (for many ovens that’s 550 degrees F)
Add sauce and toppings
Put your pizza in the oven until the crust starts to brown (should be around 9 minutes, maybe a little longer if you like it crispy!)
Let cool and enjoy!

4 cups milk powder/rev 280g milk powder which is pre-measured in glass bottles
NR stir, heat in insta pot to 180° for 30minutes, check with thermometer.
NR cool for 10minutes, remove and cool to 110°
NR remove skin over milk
stir in 4 spoons of starter
return to Instant, yogurt, 118° for 15 hours
transfer to quart containers, refrigerate

If your yogurt tastes fine, but has a weird gritty or grainy texture, this typically indicates that you heated the milk too fast. Allow the milk to come to 180 F more slowly next time. When I make yogurt, typically 1 gallon at a time, it will take 45 minutes or longer to come to the right temperature.

The rice is first cooked briefly in a soffritto of onion and butter or olive oil, to coat each grain in a film of fat, called tostatura; white wine is added and must be absorbed by the grains. When it has been absorbed the heat is raised to medium high, and boiling stock is gradually added in small amounts, while stirring constantly. The constant stirring, with only a small amount of liquid present, forces the grains to rub against each other and release the starch from the outside of the grains into the surrounding liquid, creating a smooth creamy-textured mass. When the rice is cooked the pot is taken off the heat for mantecatura, vigorously beating in refrigerated balls of grated parmesan cheese and butter, to make the texture as creamy and smooth as possible. It may be removed from the heat a few minutes earlier and left to cook with its residual heat.

  1. chickpeas, cooked – 1/4 cup
  2. onion - 1 large slice finely chopped
  3. lemon juice - 1/2 lemon squeezed
  4. seasoned salt, pepper

Mash up chickpeas in a bowl, add onion, lemon juice, season lightly with seasoned salt and pepper. cover, refrigerate for 4 hours minimum.

  8. olive oil – 6 table spoon
  9. salt – As required
  10. Water – 1 1/2 cup

Soak chickpeas for 10 hours. Add chickpeas, water and salt into a pressure cooker and cook until 8 whistles. keep the remaining water aside for grinding. Crush the cooked chickpeas in a food processor, then add Tahina paste, lemon juice, garlic cloves, little salt and 3 table spoon of olive oil into the food processor and grind until gets plain paste. Add chickpeas water for consistency while grinding.

Transfer it to a bowl and add finely chopped onion, tomato and green chili and mix well. Decorate with few cooked chickpeas and olive oil. Cover the bowl and keep in a refrigerator for 10 minutes

  1. Peel and wash the onions. If you’re using large onions, chop them or slice them into 1/2-inch pieces.
  2. Place the onions in a 12-quart pot, cover them with water, and bring them to a boil over medium high heat. Boil them for 5 minutes, or until they’re translucent.
  3. Using a slotted spoon, remove the onions from cooking liquid (reserve the liquid for filling the jars) and firmly pack them into the prepared jars. Add 1/2 teaspoon salt to each pint jar or 1 teaspoon salt to each quart jar, if desired. Pour the hot cooking liquid over the onions, leaving 1-inch headspace. Release any air bubbles with a nonreactive utensil, adding liquid as necessary to maintain the proper headspace. Wipe the jar rims; seal the jars with the two-piece caps, hand-tightening the bands.
  4. Process the filled jars in a pressure canner at 10 pounds pressure for 40 minutes (pints or quarts). Allow the pressure to return to 0, wait an additional 10 minutes, and then carefully open the canner lid.
